What's In My Box
- Egusi (Ground Melon Seeds): 1½ cups
- Palm Oil: ½ cup
- Pepper & Tomatoes: 2 Cameroon peppers + 2 tomatoes
- Onion: 1 medium
- Seasoning: 1 tbsp General Spice, 1 tbsp crayfish, 2 Maggi seasoning cubes, salt to taste
- Vegetables: 2 cups chopped spinach, bitter leaf, or ugu
- Locust beans
Additional Ingredients for Egusi Soup (Not included in Box)
- Protein: 1 lb goat meat, beef, chicken, or assorted meats
- Fish: 1 cup smoked fish or stockfish (optional)
- Stock: 2-3 cups (from boiled meat)
Ingredients for Fufu
- 2-cups cassava flour, pounded yam flour, or plantain fufu flour
- 3-cups water
How to Prepare Egusi Soup
1️⃣ Boil the Meat: In a pot, season the meat with salt, seasoning cubes, and onions. Add water and cook until tender. Set aside.
2️⃣ Prepare the Egusi Paste: In a bowl, mix the ground egusi with a little water to form a thick paste.
3️⃣ Heat the Palm Oil: In a pot, heat palm oil on medium heat. Add chopped onions and fry for a minute.
4️⃣ Cook the Egusi: Add the egusi paste in small lumps and fry for about 10 minutes, stirring occasionally.
5️⃣ Add Pepper & Stock: Pour in the blended pepper and tomatoes, then add meat stock gradually while stirring.
6️⃣ Simmer & Add Meat: Let it cook for 10-15 minutes. Add the cooked meat, fish, and crayfish. Stir well.
7️⃣ Add Vegetables: Finally, add chopped vegetables and simmer for another 5 minutes. Adjust seasoning and serve hot!
How to Prepare Fufu
1️⃣ Boil Water: In a pot, bring 3 cups of water to a gentle boil.
2️⃣ Add Flour Gradually: Reduce heat to low and slowly add the fufu flour while stirring continuously.
3️⃣ Mix & Cook: Stir until it thickens and forms a smooth, stretchy dough. Add a little water if needed and let it steam for 2-3 minutes.
4️⃣ Shape & Serve: Mold the fufu into balls and serve with steaming hot Egusi Soup!
